Meet the Caucasian Flavors

Being a very multicultural republic, the food of Dagestan and the region of Caucasus is being influenced by many different cuisines. It consists of a lot of potatoes and herring, dough dishes like Piroschki (filled with meat, mushrooms or roasted green cabbage) and Pelmeni (similar to Ravioli; filled with either meat, young stinging nettle or sour cherries as dessert) and spices that are being used a lot are bay leaves and allspice.


I have only ever experienced the Caucasian food made out of the ingredients available in Germany. Surprisingly enough, a lot of food can be cooked from the things we have here but I remember some instances where my mom tried to cook a traditional Caucasian dish and complained about how it did not work because we have different kinds of flour here or something similar.

Back when my mom was living in Dagestan, next to the Caspian Sea, rice pudding was a popular breakfast and dinner. However, the most interesting dish she told me about was a winter dish made out of green tea, milk, salt and pepper paired with a slice of bread and feta cheese. Would you try something like this?


Anyways, I will show you some of my favorite Caucasian Recipes and some that are even new to me, that can mostly be recreated easily without any special ingredients.
