Genuine Cologne cuisine is simple and delicious. In the past, the Rhenish housewife brought what was nutritious, inexpensive and quick to prepare to the table. Pomme (potatoes), Murre (carrots) and Kappes (cabbage) grew practically on the doorstep. That's why they were affordable even for the small purse. Only rich families could afford meat every day. And the little people? They treated themselves to roast or minced meat at best on holidays. The housewife cooked what made the family full. This included a fair amount of fat, for energy, so to speak. Quite a lot, if it was affordable.
