Bubble Tea


The bubble tea could be traced back to the 1940s. The first tea shop selling shou yao tea was located in Taichung. Because of the humid climate in Taiwan, people usually don't like to drink hot tea, so iced tea becomes the main drink in summer. In Taiwan, people like to have a cup of bubble tea with their dishes.

Ingredients

  • For the Black Tea

    • 2 cups water(480 g)

    • 6 black tea bags

  • For the Tapioca Pearls

    • ½ cup medium black tapioca pearls(50 g)

    • 2 cups brown sugar(440 g)

    • 1 cup hot water(240 mL)

or

  • 50g instant tapioca pearls

  • (2 servings)

Instructions

  1. Take a large pot with boiling water, add tapioca pearls into the boiling water.

  2. Boil and stir occasionally for around 15-20 min, then remove from heat,cover and let it sit for 15 min. (if you use instant tapioca pearls, it only needs to cook for 10 min.)

  3. Drain the bubbles and then put it into another container. then stir with honey and sugar.

  4. Prepare you a cup of hot tea mixed with milk, and add some ice cubes.

  5. Put bubbles on the top of your cup.
