Сырники/Syrniki (Curd Pancakes)


This is the best. Thing. Ever. I have been eating Syrniki since I was a child. I remember those spring afternoons, sitting in front of the TV after dance practice, watching my favorite kids show back then (it was the show ‘Disney’s Adventures of the Gummy bears - don’t judge me I was probably like 8). While the intro started my mom served me some freshly-made Syrniki with this strawberry sauce and I ate every single one of them, even if I was completely full. These pancakes basically are my childhood!


If there were no strawberries available at the moment, I loved to eat them simply with cinnamon and sugar, whereas my mum mixes up some dark marmalade with crème fraîche. I bet you could even eat them with Nutella or peanut butter! If you are really experimental, they’re also really tasty with some crispy bacon and maple syrup :)


This sweet main dish as well as my beloved strawberry sauce are really simple to make and don’t need any special ingredients. Yay!


Ingredients

For the Pancakes

  • 250 gr curd

  • 2 eggs

  • 4 tablespoons of flour

  • optional: sugar or vanilla sugar

  • oil

For the strawberry sauce:

  • handful strawberries

  • 2 tablespoons crème fraîche

  • sugar to taste


Instructions

For the pancakes

  1. In a large bowl, mix the curd and the eggs until smooth.

  2. Now add the flour one by one while stirring the dough.

  3. If you want, you can add some sugar or even a packet vanilla sugar (our personal favorite) and mix again.

  4. Put some oil in a pan and keep on low heat.

  5. With a tablespoon, put little blops on the pan with a little bit of space in-between.

  6. Wait until the pancakes become solid and gold-brown on the bottom half, then turn and let the other side sit as well.

  7. Repeat until there is no more dough left.

  8. Serve with your topping of choice



For the strawberry sauce

  1. Wash and cut the strawberries.

  2. In a bowl, squeeze the strawberries with a fork or something similar, until you have something that looks like a strawberry soup.

  3. Mix in the crème fraîche and sugar. Try and see if you would like to add more.

  4. Serve!
