This Hessian delicacy is not for everyone but is as typical for the state as it gets. It’s made out of a special cheese which is put into a marinade. There are many different ways to prepare the marinade: With German apple cider, with or without oil, apple vinegar, white wine vinegar or even water. So the recipe described further down is simply a variation of the recipe. If you don’t really like it, maybe try another variation of it!
“Handkäs’ mit Musik” is usually eaten only with a knife, you cut a part off, gather some of the marinade and spread it on a piece of bread. It also pairs perfectly with German apple wine or white wine from one of the most popular wine regions in Hesse: Rheinhessen or Rheingau.
By the way, the literal translation of “Handkäs’ mit Musik” is hand cheese with music. Why music you ask? Well some say, it is because this dish is prepared with a lot of onions and those are known for…well, creating “music” coming from your body by the end of the day.
Ingredients:
8 pieces Handkäse (or sour milk cheese)
2 onions
6 ts wine vinegar
5 ts German apple cider or riesling
6 EL oil
cumin
salt and pepper
Instructions:
Peel onion and cut into small pieces.
Place room temperature cheese (Handkäse) into a container and spread onions, salt and pepper on top of it.
Mix wine vinegar, German apple cider and oil until they are one marinade.
Now pour the marinade over the cheese until it is completely covered by the marinade.
Close the container and let it sit in the fridge for a couple of hours or even over night. You can flip it after some time to make sure it is more evenly coated by the marinade.
When you’re ready to eat, garnish with cumin and serve with German bread, butter and German apple cider.
