Баклажановые ролики/Baklaganowie roliki (Eggplant Rolls)
Unfortunately I will never be able to taste this delicious-looking snack due to a nut allergy but the recipe sounded so intriguing to me I just could not withhold it from you non-allergics! It is approved by my mom and let’s be honest: if you read my introduction to Caucasian cuisine you know that only that really counts here.
This appetizer is incredibly easy to make and something different. Perfect for serving to your allergy-free friends!
Ingredients
1 eggplant
1 clove of garlic
handful walnuts
½ teaspoon oil
parsley
salt
Instructions
Wash eggplants and cut in long thin slices.
Put onto tissue papers, sprinkle some salt over them and let them sit for 15 minutes.
Take the walnuts and grate them.
Chop the garlic and the parsley, then mix together with walnuts and oil.
Wash the salt off the eggplants and fry in oil until gold-brown on both sides.
Dab with a paper towel to remove excess oil.
Spread filling on the eggplant slices.
Roll up the slices and secure with a wooden toothpick.
Serve immediately and приятного аппетита!
Don’t forget to remove the toothpicks before eating :)
