Pão de Queijo, or Cheese Bread, is one of the most famous and loved appetizers in Brazil. People eat them even for breakfast. Whether it's bread or a roll it’s debatable, but the important thing it’s the flavor. If you are a cheese lover like me, then you found your perfect snack.
It comes from Minas Gerais state, in the Southeast of Brazil, and is made with manioc flour or tapioca starch, so instead of the bread texture, it is soft. It’s easy to prepare and you can find the ingredients in some big supermarkets (that have international sections) here in Germany or Latin stores. You can also look for them online, on Amazon.
You can also find the mixed powder to make the cheese bread. In this case you need to add only egg and water. It’s super easy and still very good.
In this post I share with you one of the manyl recipes for Pão de Queijo that are out there. Normally we would use the sweet and the sour tapioca starches (Polvilhos doce e azedo), but because it’s not that common, I found one recipe that uses only the normal tapioca starch, easier to find here. Ingredients:
- 4 cups tapioca flour or tapioca starch
-1 1/4 cups milk
-1/2 cup water
- 6 tablespoons oil
- 1 1/2 cups grated parmesan cheese
- 1 cups shredded Mozzarella cheese
- 2 large eggs
- 2 teaspoons salt
Instructions:
Preheat the oven (180º degrees) for about 10 -15 minutes.
Then pour the oil, water, milk, and salt into a saucepan and place over high heat. When the mixture comes to a boil, remove from heat immediately and stir in the tapioca starch until it gets smooth.
Let the mixture rest until it cools down and add the eggs and cheese. Mix it well.
Make little balls and put them on a baking sheet and place them on the oven.
Take them out after 20 minutes or when they are golden.
